Pork Chop Onion Rice Bake

Ingredients:

6 pork chops, 1 ½ inches thick

2 TBS. bacon drippings or butter

1 cup uncooked wild rice

1 envelope onion soup mix

1 (4 oz) can sliced mushrooms (reserve juice)

2 TBS. diced pimento

3 cups Hot water

Preheat oven to 350 degrees. Brown chops in bacon fat or butter.  Spread rice in bottom of 9×13 inch baking dish.  Reserve one tablespoon of seasoning from onion soup mix.  Sprinkle remaining seasoning over rice.  Place mushrooms and pimentos over rice. Pour 3 cups hot water and the reserved juice from mushrooms over rice.  Arrange browned chops on top of rice mixture and sprinkle reserved seasoning on top of chops.  Cover tightly with foil and bake at 350 degrees for 45 minutes or until chops reach 145 degrees.
