Ingredients:
¼ cup extra virgin olive oil
2 Tbs red wine vinegar
½ tsp salt
3 cups cubed seedless watermelon
1 cup crumbled feta
1 cup small diced cucumbers
½ cup coarsely chopped fresh mint, plus more for garnish
½ cup thinly sliced red onion
Instructions:
In a small bowl, whisk oil, vinegar, and salt. Add watermelon, feta, cucumber, mint, and onion and toss to coat. Garnish with mint
