Tortilla Casserole

Ingredients:

2.5 lbs ground beef

2 medium onions, chopped

2 garlic cloves, minced

2 TBS. ground cumin

2 tsp. Salt

1 (10 oz) can enchilada sauce

8 large flour tortillas

4 cups shredded Cheddar Jack blend cheese

1 (4 oz) can chopped mild green chilies

Garnish with: cilantro, sour cream, salsa, avocado

Instructions:

Preheat the oven to 350 degrees.  Grease a 9 inch baking dish.  

In a large skillet, brown the ground beef over medium heat until it is no longer pink.  Drain fat.  Add the onion and cook until softened. Add garlic, cumin, salt, and enchilada sauce.  Reduce heat and simmer 5 – 10 minutes.  

Place one tortilla in the bottom of the prepared dish.  Layer with ⅓ meat mixture, ¼ of the cheese and ⅓ of the chilies.  Repeat layers twice.  Top with remaining tortilla.  Sprinkle with remaining cheese.

Cover tightly with foil, and bake for 30 minutes.  Uncover and bake an additional 5 minutes.  Let it rest for 10 minutes before serving.  Cut and top with desired garnish.
