Sweet Potato Casserole
3 cups cooked and mashed sweet potatoes
1 cup sugar
2 eggs, well beaten
¾ cup butter, melted
½ teaspoon nutmeg
½ teaspoon cinnamon
1 cup milk or half and half
Mix all ingredients well and pour into a 2 quart casserole dish. Bake at 400 degrees for 20 minutes. While this bakes, make the topping.
Topping:
1 1/2 cup crushed cornflakes
1 cup brown sugar
1 teaspoon cinnamon
½ teaspoon nutmeg
1 cup chopped pecans
¾ cup butter, melted
Mix all ingredients and spread evenly over potatoes. Return to oven for an additional 10 minutes.
