Sweet Onion Bacon Jam
Ingredients:
1 ½ lbs. Bacon, chopped
1 large sweet onion, diced
1 tsp. Salt
½ cup firmly packed brown sugar
½ cup water
¼ cup sherry
1 ½ tsp chopped fresh thyme
½ tsp ground black pepper
¼ tsp ground red pepper
Instructions:
- In a large dutch oven, cook bacon, stirring occasionally, until crisp. Using a slotted spoon, remove bacon and drain on paper towels. Reserve 1 tablespoon dripping in pot.
- Add onion and salt to Dutch oven and cook until tender, about 10 minutes.
- Stir in bacon, brown sugar, water, sherry, thyme, black and red peppers. Cook until thickened – about 10 -15 minutes. Stir occasionally.
- In a food processor or blender, pulse half the bacon mixture until it resembles course meal. Stir into remaining bacon jam, and let cool to room temperature. Refrigerate in an airtight container for up to 2 weeks.
