Sesame Chicken

Ingredients:

For the chicken –

1 ½ lbs. Boneless skinless chicken breasts, cut into 1 inch pieces

2 eggs, beaten 

Salt and pepper to taste

½ cup all purpose flour

½ cup cornstarch

Oil for frying

For the sauce –

1 tsp olive oil

1 clove minced garlic

¼ cup honey

¼ cup soy sauce – I use reduced sodium

2 Tbs ketchup

3 Tbs brown sugar

2 Tbs rice vinegar

1 Tbs toasted sesame oil

2 tsp cornstarch

2 Tbs  sesame seeds

2 Tbs sliced green onions

Instructions:

  • Beat eggs, salt, and pepper in a bowl to combine
  • Mix flour and cornstarch in a shallow bowl or plate
  • Dip each piece of chicken into the egg mixture, then into the flour mixture. Repeat until all chicken pieces are coated.
  • Heat 3 inches of oil in a deep pan to 350 degrees.
  • Add chicken to pan – working in batches as to not overcrowd.  Cook for about 5 minutes until crispy and golden brown.  Drain on paper towel. Repeat until all chicken is cooked.  Chicken should be cooked to 165 degrees internally.
  • While chicken is cooking make the sauce. Heat oil in pan and add garlic.  Cook for 30 seconds. Add all other sauce ingredients except for sesame seeds and green onions.  Whisk well until combined. Cook 3 minutes or until just thickened. 
  • Add chicken back into sauce. Toss to coat well. 
  • Sprinkle with sesame seeds and green onions.
