Pizza Strata
Ingredients:
2 tbsp unsalted butter
1/2 cup pepperoni, diced
1/2 yellow onion, diced
2 garlic cloves, minced
6 large eggs
3/4 cup heavy whipping cream
1 tsp salt
1/4 – 1/2 tsp crushed red pepper flakes
1/2 tsp dried oregano fresh parsley and rosemary, finely chopped
1 demi-baguette, torn into chunks
1/2 cup jarred marinara
1/2 cup grated mozzarella cheese
1/4 cup finely grated parmesan cheese
Instructions:
Take 1 tbsp unsalted butter and use it to grease a 9×13-inch baking dish.
Tear the baguette into small chunks and add them to the prepared dish.
Melt the remaining tbsp unsalted butter in a small skillet over medium heat. Add the diced pepperoni and onion. Cook until the pepperoni is slightly crispy, about 4 minutes. Add the garlic and mix into the pepperoni and onion. Cook for 1 more minute. Remove from heat.
Add the eggs and heavy cream to a medium mixing bowl. Whisk to combine. Add the salt, crushed red pepper, oregano, and fresh herbs if you are using them. Whisk to combine. Mix in 3/4 of the grated cheese to the egg mixture. Set aside.
Add all of the pepperoni, garlic, and onion EXCEPT for 1 heaping TBSP to the bread. Toss gently to mix and combine. Make sure that all the pepperoni does not go to the bottom. Use a teaspoon to dot the marinara over the top of the bread and pepperoni.
Pour the egg mixture over the bread and pepperoni. Top with the remaining cheese and then the pepperoni. Sprinkle a little more dried oregano and crushed red pepper.
Cover the pan with foil and refrigerate overnight.
Preheat the oven to 350 degrees F. Bake the strata for 20-25 minutes covered. Remove the foil and bake for 15-20 minutes until the cheese starts to turn golden and the center of the strata is puffy and no longer jiggly. Let the strata cool for 5-10 minutes before cutting into squares and serving.
