Lemon Basil Chicken Salad
Ingredients:
2 cups of shredded chicken
1 large rib of celery finely dice
¾ cup mayonnaise
½ teaspoon garlic powder
½ teaspoon onion powder
⅛ teaspoon black pepper
⅛ teaspoon salt
3 tablespoons finely diced fresh basil
1 tablespoon lemon juice
Directions:
- Boil your chicken until fully cooked and tender, about 10 minutes.
- Once the chicken is done, remove it from the water and let it cool. Use two forks or use a stand or hand mixer to shred the chicken.
- Dice your celery into a very small dice.
- Cut fresh basil into fine shreds.
- Whisk in the garlic powder, onion powder, salt, and pepper with the mayonnaise. In a large bowl combine the shredded chicken, mayonnaise with seasonings, celery, and basil. Add in the lemon juice and stir well.
- Refrigerate for 2 hours before serving.
