Ingredients:
- 1 1/2 lb green beans, halved
- 1 medium yellow onion, thinly sliced
- 1 1/2 cup French’s fried onions
- 2 (17-oz) pkg. gnocchi
- 1/2 cup (1 stick) unsalted butter, divided
- 3 cup whole milk
- 1 cup low-sodium chicken broth
- 1/4 cup (30 g) all-purpose flour
- 2 cloves garlic, finely chopped
- Kosher salt
- Parmesan Cheese
Instructions:
Boil green beans for about 2 minutes and then place them in an ice bath to stop cooking process. You want them to be tender crisp. Melt ¼ cup butter in a pan and cook onions. Add garlic toward the last minute of cooking. Place green beans in the bottom of a 9×13 baking dish and layer onions on top of beans. Melt the rest of the butter (¼ cup) and add ¼ cup flour. Cook until thick and smells a little nutty. Stir in milk and chicken broth until flour smoothes out. Add gnocchi – you may need to break apart if they stick together. Cook until sauce is thickened. Sprinkle with salt. Pour mixture over green beans. Top with french fried onions and sprinkle with parmesan cheese. Bake at 350 degrees for 15 minutes.
