Dad’s Blueberry Pie
Pie:
1 baked 9 inch pie shell
4 cups fresh blueberries
1 cup sugar
3 Tbs. cornstarch
¼ tsp. Salt
¼ cup cold water
1 TBS Butter
Topping:
⅓ cup butter, melted
1 box yellow cake mix
Place 2 cups whole fresh blueberries in pie shell.
Dissolve cornstarch in the water before adding
Cook 2 cups blueberries in sugar, cornstarch water, salt, and butter over medium heat until thick. Pour over berries in baked pie shell and chill.
Topping:
Mix melted butter with cake mix. Spread on cookie sheet and bake on 400 degrees for 10 minutes. Crumble and sprinkle over pie. You’ll probably only use a cup. You can save the rest for later.
Keep pie refrigerated.
