Chicken Fiesta
½ cup Cheddar cheese crackers, crushed
2 Tbs. taco seasoning
8 boneless, skinless chicken breasts
4 green onions, chopped
2 Tbs butter, melted
2 cups whipping cream
1 cup shredded Monterey Jack
1 cup shredded cheddar
4 oz can chopped green chillies
1 chicken bouillon cube, crushed
Combine cracker crumbs and taco seasoning mix. Dredge chicken in crumbs, coating on all sides. Place in a greased 9×13 inch baking dish. Cover and bake at 350 degrees for 20 minutes. Meanwhile, saute green onions in butter until tender. Stir in whipping cream, the cheeses, green chilies, and bouillon granules. Remove chicken from oven. Pour sauce over chicken and bake an additional 25 -30 minutes.
