Broccoli Rice Casserole
Ingredients:
6 cups broccoli, cut into bite size pieces
2 cups cooked white rice
Sauce:
1 stick butter, melted
2 onions, diced
3 cloves garlic, minced
4 TBS. flour
2 ½ cups milk
1 tsp black pepper
1tsp dry mustard powder
1 tsp paprika
½ tsp salt
4 oz cream cheese
2 cups shredded sharp cheddar, divided
Directions:
- Preheat oven to 350 degrees.
- Melt butter in skillet and saute diced onion until translucent. Add minced garlic and cook for about 1 minute. Stir in flour. Slowly whisk in milk and cook until thickened. Remove from heat and whisk in pepper, dry mustard, paprika, salt, cream cheese, and 1 ½ cups of shredded cheddar.
- Stir rice, broccoli, and sauce together
- Pour into a greased 2 quart casserole dish.
- Top with remaining cheese
- Bake at 350 degrees for 35 minutes
