Brisket is pretty easy. It’s just time consuming and you need a smoker. First, trim any fat and silver skin from the brisket. (Save the fat and put in an oven proof bowl and render along with your brisket in the smoker). Coat it in coarse salt and pepper. I added garlic powder. Smoke for 8 hours on 225 degrees. At that point, remove from smoker, baste with rendered fat, and wrap in butcher paper or aluminum foil. Put it back into the smoker for about 4 more hours.
