Bananas Foster Pancakes
Ingredients
- Pancakes – however you like to make them
- 6 tbsp butter
- ¼ cup packed brown sugar
- ½ tsp cinnamon
- ¼ tsp nutmeg
- ½ cup pure maple syrup
- ¼ tsp rum extract
- 2 large bananas, sliced
- Pecans, to garnish
- 2 cups heavy whipping cream
INSTRUCTIONS
- First, whip the heavy whipping cream to a stiff peak. Cover and place in the refrigerator.
- Prepare pancakes as you like. Set aside on a plate.
- Make the topping: Add all topping ingredients except bananas and pecans to a skillet over low heat. Cook for 3 minutes, stirring frequently, or until brown sugar has melted into butter.
- Slice bananas into coins. Place these banana coins in the skillet. Cook for 1 minute on each side.
- Finally, top pancakes with caramelized bananas. Pour some of the sauce from the pan on top. Dollop a spoonful of whipping cream and garnish with pecans.
