Apple Pie Sandwich Cookies
Ingredients:
¾ cup unsalted butter, softened
1 cup granulated sugar
½ cup firmly packed light brown sugar
2 large eggs
2 tsp vanilla extract
2 ½ cups all purpose flour
2 cups old fashioned oats
2 tsp apple pie spice
1 tsp salt
¾ tsp baking powder
¾ tsp baking soda
1 ½ cups diced Granny Smith apple
⅔ cup caramel sauce
Creamy Spiced Filling (separate recipe)
Directions:
- Preheat oven to 350 degrees. Line baking sheets with parchment paper
 - Beat butter, sugar, and brown sugar together at medium speed in electric mixer until fluffy. Add eggs one at a time, beating well after each addition. Beat in vanilla.
 - In a separate bowl, stir together flour, oats, apple pie spice, salt, baking powder and baking soda. Add flour mixture to butter mixture and beat at a low speed until just combined. Do not overmix. Add apple – beating until just combined.
 - Using a 1 ½ inch scoop, scoop dough and place 2 inches apart on prepared sheet pan. Bake 12-14 minutes or until edges are golden. Let cool on pans for 5 minutes. Remove from pans and let cool completely on wire racks.
 - Spread or pipe Creamy Spiced Filling onto flat side of half cookies. Drizzle caramel sauce onto filling. Place remaining cookies, flat side down on top of filled cookie.
 - Cover and refrigerate until filling is set, about 30 minutes. Keep refrigerated in airtight container for up to 3 days.
 
Creamy Spiced Filling
Ingredients:
1 ½ cups unsalted butter, softened
½ tsp salt
¼ tsp apple pie spice
6 cups powdered sugar
¼ cup heavy whipping cream
In a large bowl, beat butter at medium speed until creamy. Add salt and apple pie spice, beating until combined. Add powdered sugar 1 ½ cups at a time, alternate with 1 Tbs cream at a time. Beat well after each addition.
