Ingredients:
4 oz Mozzarella, cut into ½ inch cubes (I also use the fresh Mozzarella balls)
4 cups seedless watermelon, cut into cubes
Fresh cut basil – quantity depends on how you make it. (If making a salad, cut into thin strips. If making skewers, use whole leaf folded in half
1 TBS of high quality balsamic vinegar or balsamic glaze
Directions:
If making salad, mix all ingredients except for vinegar in a bowl. If making skewers, alternate melon, basil, cheese. Just before serving, drizzle the balsamic vinegar over salad or skewer. To make the glaze, just heat up the vinegar on medium heat until it thickens. I prefer the glaze as it holds it a little better.
