Crunchy Romaine Salad
Salad Ingredients:
4 cups Romaine lettuce
4 cups Iceberg lettuce
½ cup chopped green onions
1 crown chopped broccoli florets
2 can mandarin oranges, drained
1 cup (or more) sliced strawberries
Mix all ingredients, cover, and refrigerate until ready to use.
Crunchy Ingredients:
1 package ramen noodles, seasoning removed
1 cup chopped pecans
¼ cup butter
Melt butter in skillet over low heat. Crumble noodles and add to skillet along with the chopped pecans. Saute until slightly toasted. Set aside until ready to serve salad. Sprinkle on top of salad.
Salad Dressing:
½ cup sugar
½ cup canola or olive oil
¼ cup red wine vinegar
1 tsp soy sauce
Mix all ingredients. Don’t pour on salad until you are ready to serve as the vinegar will wilt the lettuce. You will need to remix before pouring over salad.
