2 ¼ cups of all purpose flour
½ teaspoon baking soda
¼ teaspoon salt
1 cup quick oats
1 teaspoon cinnamon
2 teaspoons allspice
1 cup dark brown sugar
½ cup granulated sugar
2 sticks butter, softened
2 Tablespoons honey
2 teaspoons vanilla extract
2 large brown eggs
1 ½ cups dried cranberries
½ cup chopped pecans
½ cup white chocolate chips
Preheat oven to 325 degrees.
In a medium bowl, mix together flour, salt, baking soda, oats, cinnamon and all spice. Set aside.
In a large bowl, blend sugars with an electric mixer at medium speed. Add butter and mix to form a grainy paste. Scrape down sides of bowl, then add honey, vanilla, and eggs. Mix at medium speed until light and fluffy.
Add the flour mixture to the sugar mixture until just combined. Stir in dried cranberries, pecans, and white chocolate chips.
Drop by rounded tablespoons onto ungreased cookie sheets. Bake for 15 minutes. Immediately transfer cookies to a cooling rack.
