Freeda’s Lemon Crumb Squares
Ingredients:
1 (14 oz) can sweetened condensed milk
½ cup lemon juice
2 teaspoons lemon zest
1 ½ cups all purpose flour
1 tsp baking powder
½ tsp salt
⅔ cup butter, softened
1 cup dark brown sugar
1 cup uncooked oatmeal
Directions:
Preheat oven to 350 degrees. Grease an 8×12 inch pan.
Blend together sweetened condensed milk, lemon juice, and lemon zest. Set aside.
Sift together flour, baking powder, and salt. Set aside.
Cream together butter and sugar and beat until smooth. Add in oatmeal and flour mixture.
Mix until crumbly.
Spread half the flour mixture into the prepared pan and press down.
Spread milk mixture over the top of the crust layer.
Sprinkle the rest of the flour mixture over the top of the milk mixture.
Bake at 350 degrees until edges are brown – about 25 minutes.
Cool and cut into squares.
