Balsamic Peach Pork Chops
Ingredients:
2 Tbs olive oil
3 bone in pork chops
½ Tbs black pepper
½ tsp salt
1 tsp cayanne pepper
½ cup Balsamic Vinegar
2 Tbs honey
1 Tbs fresh thyme or rosemary
2 peaches, sliced and pits removed
Instructions:
In a large oven proof skillet, add olive oil and warm over medium heat.
In a medium bowl, whisk together balsamic vinegar, honey, and thyme. Add peaches. Toss to coat and set aside.
Pat the pork chops dry and rub salt, pepper, and cayenne pepper all over them
Add pork chops to hot skillet and cook, flipping them after 6 minutes. Cook until thermometer reads 145 degrees. Pour the peach mixture over the pork chops and cook for 3 minutes.
Remove pork chops from skillet but leave peach mixture. Cook peaches for an additional 8 – 10 minutes until the sauce has reduced.
Place pork chops back in skillet and spoon peach mixture over them.
