Cold Cherry Soup

Ingredients:

3 cups cold water

1 cup sugar

1 cinnamon stick

4 cups pitted fresh cherries

1 Tablespoon arrowroot

1/2 cup heavy cream

1/2 cup dry red wine or grape juice

Directions:

Combine water, sugar, and cinnamon stick in a sauce pan and bring to a boil. Add cherries and simmer, partially uncovered, over low heat for 30 minutes. Remove cinnamon stick. In a small bowl, mix arrowroot with 2 Tablespoons of cherry mixture to make a paste. Add to soup, stirring constantly. Bring to a boil. Reduce heat and simmer until soup thickens, slightly, about 30 minutes. Chill. Before serving, stir in heavy whipping cream and wine or juice.
