Apple Coleslaw

Ingredients:

¼ cup apple cider vinegar

2 Tbs. Dijon mustard

2 Tbs. honey

1 tsp. Salt

½ tsp pepper

¼ cup canola oil

2 (10 oz) packages shredded coleslaw mix

4 green onions, sliced

2 celery ribs, sliced

2 Honeycrisp apples, chopped (You may substitute pears if desired)

Directions:

Whisk together vinegar, mustard, honey, salt, and pepper.  Slowly whisk in oil. Whisk constantly until well blended.  Set aside.  In a medium bowl, stir coleslaw, green onions, celery, and apples together.  Pour vinegar mixture over slaw and toss to evenly coat.  

*Note: You can cut apples ahead of time.  Combine 2 cups of water and 3 Tbs. of lemon juice. Pour over apples and store overnight.  Drain apples before mixing with slaw.
