Chicken and Dumplings
Ingredients:
1 whole chicken, cut up
2 cups all purpose flour
2 teaspoons baking powder
1 teaspoon salt
2 teaspoons black pepper
1 cup of buttermilk
5 cups chicken broth
1 cup cream, half and half, or milk, optional
Seasonings of choice: I use salt, pepper and thyme or poultry seasonings to your taste
Directions:
Boil chicken until falling off the bone or to an internal temperature of 165. Shred and set aside. Mix flour, baking powder, salt, and pepper together. Add buttermilk to get a stiff dough. Roll out dough very thin on a floured surface. Cut dough into squares about 1 inch wide. Bring chicken broth to a boil and drop strips a few at a time into boiling broth. Boil for about 10 minutes. Remove from heat. Stir in shredded chicken, milk, and seasonings.
