Mrs. Lee’s Chicken Enchiladas
Ingredients:
½ cup butter
½ cup chopped onion
1 clove garlic, minced
1 (4 oz) can diced green chilies
1 can cream of mushroom soup
1 cup sour cream
2 cup chopped, cooked chicken
1 cup milk
2 cups shredded extra sharp cheddar cheese
1 package small flour tortillas
Directions:
Grease a 9×13 inch baking dish. Saute the onion in butter. Add garlic and saute about 1 minute. Add green chilies (undrained), sour cream, and soup. Mix until well combined. Reserve ¾ cup of mixture. To the rest, add chicken and 1 cup of cheese. Mix until combined. Add a large spoonful of mixture to a tortilla. Roll up and place seam side down in prepared pan. Mix the reserved ¾ cup mixture with 1 cup of milk. Pour over enchiladas. Sprinkle remaining cheese over enchiladas and bake 350 degrees for 30 minutes.
